You really want to drink coffee weeks or months after it has been roasted? You do with store bought brands. Next time you are in the grocery store, go the the coffee aisle and check out the “Sell By” date on the bags of their supposedly fresh roasted coffee. And, if it’s ground, so much the worse. You will be buying STALE coffee.

Some like to brew coffee an hour or so from roast, others several days after. Coffee will change it’s flavor and character over time - in part due to the gas that is released. Over time, several weeks only, the coffee will be stale. Always, purchase your coffee in smaller amounts and often. Store your coffee in an air tight container away from strong light. NEVER store coffee in the refrigerator or freezer - these are damp places, and, when the coffee is removed it will collect condensation.
